Test of Time is a mini-documentary series & photobook that focuses on long-standing restaurants and bars in Miami, Florida, that have survived for over 30 years. The primary objective of this series is to showcase their remarkable resilience and adaptability in the face of adversity, while also providing valuable advice to newer establishments. Considering Miami's rapid growth as one of the world's fastest-growing cities, we intend to highlight these establishments as exemplary models for others.

In the third episode, we turn our lens to Frankie’s Pizza and the Pasquarella family, one of Miami’s most beloved pizzerias and a true cornerstone of the city’s dining scene. This installment explores how Frankie’s has weathered decades of cultural shifts, economic change, and Miami’s rapidly evolving food landscape, all while staying firmly rooted in tradition. Through conversations with Roxanne Pasquarella, Joe Delgado, and the Frankie’s Pizza team, the episode reveals how resilience, community, and consistency have kept Frankie’s a lasting cultural landmark.
