“Test of Time” is a mini-documentary series & photobook that focuses on long-standing restaurants and bars in Miami, Florida, that have survived for over 30 years.

In the second episode, we dive into the story of The Big Cheese through the eyes of Bill Archer, exploring how this beloved family institution has withstood many challenges. From navigating economic shifts to maintaining a loyal customer base, The Big Cheese has remained a staple in Miami’s ever-changing dining scene. Through personal anecdotes and behind-the-scenes moments, we uncover the dedication and passion that have kept this establishment thriving for decades.

The primary objective of this series is to showcase their remarkable resilience and adaptability in the face of adversity, while also providing valuable advice to newer establishments. Considering Miami's rapid growth as one of the world's fastest-growing cities, we intend to highlight these establishments as exemplary models for others.
